Summer Pasta Salad

Overview

Have fun with this easy summer pasta salad by making it your own.   You can change the protein to prawns or slices of grilled beef or leave out entirely for a vegetarian version.   Add a variety of vegetables such as asparagus, fennel or blanched green beans.


Ingredients
Cook 2 cups of penne or fusilli pasta and set aside to cool in a large bowl.
1             TBSP Butter
1             Yellow Pepper - sliced
1             Red Pepper - sliced
½             large red onion - sliced
3             green onions - sliced
2             grilled chicken breasts - sliced
4             small tomatoes cut into wedges
¼             cup coarsely grated Asiago or Parmesan cheese
Put butter into large hot skillet.  Add red onion and peppers and sauté until they have some colour but still have some crunch. 

Vinaigrette
1 TBSP Grainy Creole Mustard (Kosliks available at Meez) or any grainy mustard
¼ cup balsamic vinegar
2/3 cup olive oil
Salt and Pepper to taste.

Put grainy mustard in bowl, whisk in vinegar, and then slowly add olive oil whisking as you add to emulsify the mixture.  Add salt and pepper to taste.  Adjust according to your taste by adding more vinegar or olive oil if required. 



Directions

Add the vinaigrette to the pasta.  Then add the sautéed peppers and onions.  Add the sliced chicken, chopped green onions and tomato wedges.   Toss lightly and garnish with the cheese.  Enjoy.
