Spring Omelet

Overview

Try this fast fresh and delicious omelet for breakfast, lunch or dinner.


Ingredients

3          eggs

2/3       cup asparagus chopped

2          small tomatoes cut into wedges

2          green onions chopped

3          pieces of Brie cheese

¼        cup of crumbled goat cheese

3         Tbsp butter

Salt and Pepper to taste


Directions

- Melt 1 Tbsp of butter in a frying pan.  Sauté the asparagus until almost soft.  Remove from heat and set aside.

- Add eggs to a bowl and whisk until light and fluffy. 

- Melt 2 Tbsp of butter in a fry pan until very hot (beurre noisette)

- Pour eggs into the very hot fry pan.  Pull edges into centre of pan to allow liquid to flow onto exposed pan. 

- Add vegetables and slices of Brie, then sprinkle with goat cheese. Put under broiler until egg is set and cheese is melted.

- Remove from pan and flip.  Salt and pepper to taste. 

Garnish and Enjoy.
