Fresh Tomato Tart

Ingredients
  • 1 lb puff pastry
  • 2 Tbsp Dijon mustard
  • 1-2 pint grape tomatoes, cut in half
  • 1 – 1 ½ Tbsp thyme, fresh
  • 1- 2 cup aged cheddar cheese, grated
  • salt & pepper

Directions
  1. Preheat Oven to 425º F.
  2. Roll out the puff pastry to 1/8 inch. 
  3. Cut into two rectangles and place them on a parchment covered baking sheet.
  4. Using a fork, poke the bottom of the pastry leaving a 1 inch border untouched, so that the edge will puff up and create the edge of the tart.
  5. Spread the bottom of the pastry with Dijon and then put the cut tomatoes, cut side up, on each tart. 
  6. Sprinkle with thyme, salt & pepper and then cheese.
  7. Bake the tarts until golden, about 12 to 15 minutes.
