Cucumber and Feta Salad with Fresh Mint & Dill

Overview

Here is a simple summer salad for you to enjoy.  The key to making this a winner is fresh mint, fresh dill and, if you can, fresh lemon juice. 


Ingredients

MEEZ:

  • 2 medium English cucumbers
  • 4 oz. feta cheese, crumbled
  • 1 medium sweet onion (such as Vidalia, Mauia, or Walla Walla)
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh dill, chopped
  • 4 Tbsp extra-virgin olive oil
  • 1 tsp Dijon mustard
  • 2 Tbsp fresh lemon juice
  • Kosher salt and fresh ground pepper to taste

Directions

Method:

  1. Halve the cucumbers lengthwise and then cut them into 3/4 inch cubes.
  2. In a large bowl, combine cucumbers, feta cheese, onion, mint and dill.
  3. In a small bowl, whisk together the olive oil, lemon juice and season to taste with Kosher salt and freshly ground pepper.
  4. Gently toss the dressing with the cucumber mixture.
  5. Season again with salt and pepper, to taste, and serve.
