Cheddar, Ham & Green Onion Biscuit

Overview

Chef Judy prepared these biscuits on Global TV's Saturday Morning News on June 5, 2010.  These wonderful biscuits are best served warm and are wonderful for breakfast or with a hot bowl of soup or stew.


Ingredients
  • 2 1/4 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 2 tsp sugar
  • 3/4 tsp baking soda
  • 1 tsp salt
  • 6 tbsp cold unsalted butter, cut into 1/2 inch cubes
  • 3 oz. ham, diced
  • 6 oz cheddar, coarsely grated (1 1/2 cups)
  • 3 green onions, finely chopped
  • 1 cup well-shaken buttermilk

Directions
  1. Preheat oven to 450F.
  2. Whisk together flour, baking powder, sugar, baking soda, and salt in a bowl, then blend in butter with your fingertips until mixture resembles coarse meal.
  3. Stir in cheddar, ham and green onions.
  4. Add buttermilk and stir until just combined.
  5. Drop dough in 12 equal mounds about 2 inches apart onto a parchment lined baking sheet.
  6. Bake in middle of oven until golden, 18 to 20 minutes.
