Asparagus Salad with Tomato Vinaigrette

Overview

This is a fresh summer salad that's easy to prepare.


Ingredients
  • 1 tbsp large asparagus spears, trimmed
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tsp Dijon mustard
  • 2 small tomatoes, finely chopped
  • 1/4 red bell pepper, finely chopped
  • 1 green onion, finely chopped
  • 1 tbsp basil, chopped

Directions
  1. Grill asparagus until just tender, about 5 minutes.
  2. Arrange asparagus on a large platter.
  3. Place the oil, vinegar, Dijon and 1 tomato into a blender and blend.  Season to taste with salt and pepper.
  4. Mix together the remaining tomato, bell pepper, green onion and basil with the vinaigrette.
  5. Spoon the vinaigreet over asparagus and serve family style.
